Dahi Bhalla

Dahi Bhalla (Soft Lentil Dumplings in Yogurt) recipe in English — easy and with a street-style taste.


Ingredients

For Bhalla (Lentil Dumplings)

  • Urad dal (split black gram) – 1 cup (soaked overnight)

  • Moong dal (split green gram) – ¼ cup (soaked overnight)

  • Ginger – 1 inch piece (grated)

  • Green chilies – 1-2 (finely chopped)

  • Salt – to taste

  • Oil – for frying

For Yogurt Mixture

  • Yogurt – 2 cups (whisked, chilled)

  • Sugar – 2-3 tsp (optional)

  • Salt – to taste

For Topping

  • Red chili powder – 1 tsp

  • Roasted cumin powder – 1 tsp

  • Chaat masala – 1 tsp

  • Tamarind sweet chutney – as needed

  • Green chutney – as needed

  • Fresh coriander – 1 tbsp (finely chopped)

  • Pomegranate seeds – a few (optional)


Method

1. Prepare the Bhalla Batter

  1. Drain the soaked urad dal and moong dal.

  2. Grind them together in a blender with ginger, green chilies, and very little water to make a smooth, fluffy paste.

  3. Transfer to a large bowl and whisk for 4-5 minutes to incorporate air — this makes the bhallas soft.

  4. Add salt and mix well.

2. Fry the Bhallas

  1. Heat oil in a deep pan.

  2. Drop spoonfuls of batter into hot oil, shaping them into small balls.

  3. Fry on medium heat until golden brown and crisp.

  4. Soak the fried bhallas in warm water for 15-20 minutes to soften.

  5. Gently press them between your palms to remove excess water.

3. Prepare the Yogurt

  1. Whisk the yogurt until smooth.

  2. Add sugar and salt, then refrigerate to keep it chilled.

4. Assemble the Dahi Bhalla

  1. Place the soaked bhallas on a plate.

  2. Pour chilled yogurt generously over them.

  3. Drizzle tamarind chutney and green chutney.

  4. Sprinkle red chili powder, roasted cumin powder, and chaat masala.

  5. Garnish with fresh coriander and pomegranate seeds.


💡 Tips:

  • Use minimal water while grinding the dal to get a thick and fluffy batter.

  • If bhallas turn hard, soak them longer in warm water.

  • Serve them chilled for the best flavor.
