Ingredients:

  • 1 cup gram flour (besan)

  • 1/4 cup wheat flour (optional for binding)

  • 1 tsp red chili powder

  • 1/2 tsp turmeric powder

  • 1 tsp carom seeds (ajwain)

  • 1 tsp sesame seeds (optional)

  • Salt to taste

  • 1 tsp coriander powder

  • 2 tbsp chopped fresh coriander leaves

  • Water (for kneading)

  •  Oil (for deep frying) 

    Instructions (विधि):

    1. Mixing the Dough:

      • In a large bowl, add besan, wheat flour, ajwain, haldi, red chilli powder, hing, and salt.

      • Add 2 tbsp oil and mix well with hands until crumbly.

      • Slowly add water and knead into a tight dough. Rest for 10 minutes.

    2. Rolling the Puri:

      • Divide the dough into equal lemon-sized balls.

      • Roll each ball into a small round puri using a rolling pin. Keep thickness medium.

    3. Frying:

      • Heat oil in a kadai (deep pan) on medium flame.

      • Slide in the puri and press gently with a slotted spoon.

      • Fry until puffed and golden. Flip and fry the other side.

      • Remove on paper towel to drain excess oil.


    🍽️ Serving Suggestions:

    • Serve hot with aloo sabzi, pickle, or curd.

    • Great for lunchboxes and travel food too.

    • You can add finely chopped methi or coriander leaves to the dough for more flavor.
