Aloo Gobi (Potato Cauliflower Curry) Recipe

Ingredients:

  • 2 cups cauliflower florets

  • 2 medium potatoes, peeled and diced

  • 2 tbsp oil

  • 1 tsp cumin seeds

  • 1 onion, finely chopped

  • 2 tomatoes, chopped

  • 2–3 green chilies, slit

  • 1 tsp ginger-garlic paste

  • ½ tsp turmeric powder

  • 1 tsp coriander powder

  • ½ tsp cumin powder

  • 1 tsp red chili powder (adjust to taste)

  • Salt to taste

  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a pan. Add cumin seeds and let them splutter.

  2. Add chopped onion and sauté until golden brown.

  3. Add ginger-garlic paste and green chilies. Cook for 1 minute.

  4. Add chopped tomatoes and cook until soft.

  5. Add turmeric, coriander powder, cumin powder, red chili powder, and salt. Mix well.

  6. Add potatoes and cauliflower florets. Stir to coat with the spices.

  7. Sprinkle a little water, cover, and cook on low flame until vegetables are tender (10–12 minutes). Stir occasionally.

  8. Garnish with fresh coriander leaves.
